Maison Kanatha is a French–Japanese–Thai omakase that opened in November 2025 inside the original dining room of one-MICHELIN-starred Sushi Kaneyoshi, in the heart of Little Tokyo, Los Angeles. It is the newest concept from the Kaneyoshi group — joining Sushi Kaneyoshi, Restaurant Ki, and Bar Sawa — and occupies the intimate counter where the group first made its name, while itamae Yoshiyuki Inoue moved to Kaneyoshi's separate Premium Room. Each course lets Japanese technique form the foundation while French cooking adds depth and Thai flavor brings brightness, with final plating presented in front of guests at the counter. Chef Shingo Kato's tasting menu runs roughly two and a half hours and is served Friday through Monday from 6:45 PM to 9:00 PM at 250 1st St, Los Angeles. Reservations are made through SevenRooms.
The kitchen is led by Chef Shingo Kato, a Michelin-recognized chef whose path runs through Uka in Hollywood and one-MICHELIN-starred Restaurant Ki, alongside Sous Chef Niki, who comes from the Sushi Kaneyoshi counter. Together they have built a tasting menu that is not fusion for novelty's sake, but a genuine conversation between three cuisines.
The idea is simple to state and difficult to execute: let Japanese technique form the foundation, let French cooking add depth and structure, and let Thai flavor bring brightness and lift. A single course might carry the clarity of dashi, the richness of a classic French sauce, and the fragrant heat of Thai aromatics — using high-quality Japanese ingredients throughout. Guests have described dishes such as a fish-stock soupe à l'oignon custard and a "French-style tempura" sea bream beignet finished with yuzu sake cream, plated in front of you at the counter.
The experience is paced over roughly two and a half hours, with most cooking done in the kitchen and final plating presented at the counter — a quiet, theatrical close to each course. With only a handful of seats per seating, Maison Kanatha is suited to special occasions, anniversaries, and diners who want something they cannot find anywhere else in the city.
